액체의 용매를 사용해서 고체 또는 액체 속에서 어떤 특정한 물질을 용해, 분리하여 조작하는 것을 추출이 한다. 혼합물 속에서 산, 알칼리에 의한 반응 또는 킬레이트 생성과 같은 화학반응에 의해서 추출하거나 용매만 이용하여 추출한다. 고체에서 추출하는 경우를 ‘고-액 추출’ 또는 ‘침출’이라하며 액체에서 추출하는 경우를 ‘액-액 추출’이라 한다.
